Broccoli Soup & Poached Egg, Smoked Flavours



Allow me to hark long back to my second ever post I'm all about soup right now, it was written when I had only just realised how easy preparing soups was. I was eyes wide open, amazed that a few bits of boring old veg could be transformed into my favourite spiced butternut soup.

Since then I've been experimenting a bit more with soup, and eventually I came up with this one. A combination of broccoli and delicious warming smoked flavours, finished with a poached egg and a sprinkle of onion flakes from a lovely Scottish food apothecary Uncle Roy's - it makes a brilliant autumn lunch.



Ingredients:
1 head of broccoli (about 300g)
2 small potatoes
1 large onion
2 large cloves of garlic
80g butter
50ml cream
1 litre of chicken or vegetable stock
Eggs (1 per portion)
Smoked onion flakes
80g applewood smoked cheese
Salt
White pepper


Start off by dicing the onion and chucking it into a large saucepan with half the butter. Crush the garlic well and add that too, cook until soft.



While the onions are softening, peel and dice the potato. Then add the potato along with half of the stock and generous amount of salt and pepper. Leave to simmer for five minutes then add the remaining stock and allow the potatoes to soften.



Roughly chop the broccoli and add it to the pan once the potatoes have softened, then add the remaining butter and cream, and season with more salt and pepper. Cook for a further 6 minutes, or until the broccoli has softened.





Grate all the Smoked cheese into the saucepan and stir until it melts into the stock.

Pour the entire pan's contents into a food processor (I use a smoothie maker for convenience) and blend until smooth. Then add back to the pan and heat through. While the soup is heating, poach an egg. To serve, pour the soup into bowls and place the poached egg in the middle, sprinkle the onion flakes over the whole dish.



The soup's flavour is delicious. If you don't like poached eggs, just leave them out!

  1. This sounds SO good! I wish I could make the recipe as stated...but I'd have trouble finding the ingredients; however, I'm going to see what I can come up with...love the idea of the poached egg! yum!

      I was really surprised by how well this soup turned out, the flavours were really full bodied and warming.

      What ingredients would you have trouble finding? I didn't think I'd used anything too unusual except the smoked onion flakes. You can buy those online, or a great substitute is crispy garlic flakes :)
