
This club sandwich is a tough guy.
He can't be cut into pretty triangles and fitted gracefully in your mouth, you have to really cram him in, taking chunks out from the side before you can get to the good stuff in the middle.
It's quick and couldn't be easier, perfect for when you get home from a long, busy day.
Ingredients for one club
Three slices of thick white farmhouse loaf,
A couple of roasted chicken thighs (the ones left over from the roast are perfect),
Four slices of dry cure ham,
Five cherry tomatoes,
A few sun dried tomatoes,
Red Leicester cheese,
Mayonnaise, home made is best,
Salad leaves,
Butter,
Salt,
Pepper.

Begin by popping your grill on about 180 degrees.
Butter a slice of bread, top with ham, sliced cherry tomatoes, sliced chicken thigh and sliced cheese. Butter both sides of another slice of bread and place on top, layer on more ham chicken and cheese, but instead of cherry tomatoes pop on some sundries. Grate cheese over the top and put it on a baking tray with the last slice of bread next to it.

Once the cheese has melted, take the sandwich out of the grill. Put the toasted slice of bread on top of the sandwich and pop it back in the grill for a couple of minutes. If you like you can put a grill rack ontop of the bread to squash the sandwich down and give it attractive charred stripes.
Take the sandwich out of the oven, and take the top slice of bread off. Leave the sandwich to cool. Add some salad leaves to the sandwich, and generously smother the top slice of bread in home made mayo.

Then slice it in half, and serve (with French fries if you are putting two fingers up to a January detox!).
