
I've not been able to post for the past week, and it has left me absolutely itching to get cooking again! I've got some interesting recipes coming up, but today it's a bit of a 70's cliche. In fact, a massive 70's cliche...
Stuffed Green Bell Peppers.
Ingredients
One green pepper per person,
100 grams of mexicana or onion and chive cheese,
A piece of thickly sliced Italian roast ham from the deli counter,
Black olives,
Bread crumbs,
Butter,
Salt,
Pepper.

Preheat your oven to 180 degrees.
The recipe is pretty much self explanatory. Cut the top off the pepper, and scoop out the insides and discard. Then fill the inside with cubes of cheese, Italian ham, chopped olives and breadcrumbs.

Once the filling reaches the rim of the pepper, put a slice of butter on the top and then cover with more cheese and ham to make a little mountain.

Season with salt and pepper, toss on a few breadcrumbs and put them in the oven for half an hour with their tops.
When they come out they should be sizzling and oozing and smell delicious.

All that's left to do is put some Earth, Wind & Fire on the stereo and you're sorted!

I'm a risotto fiend, so if I wanted risotto stuffed peppers I would have to cook one specially for it haha.
