I love England, but I can't help but feel like I've been slapped in the face with a big bag of wanderlust recently. Please, put me on a plane, take me away. I want to explore.
It's by no means a substitute for the white sands of Tahiti, but I promise this drink will brighten up your late winter lunch times. The ingredients here make for a sophisticated take on the classic "tropical" flavour combo, and it's all pretty healthy (coconut milk aside), so you can guzzle without guilt.
Ingredients for one serving
One hundred millilitres of mango juice
One hundred and fifty millilitres of coconut water
One hundred millilitres of coconut milk
Handful of mango chunks
Large handful of ice cubes
Squeeze of lime juice
One teaspoon of orange blossom water
Half a teaspoon of vanilla essence

All you really need to do for this is roughly measure out your ingredients and thoroughly blend them together, preferably in a smoothie maker but a blender will do fine. If your mixture looks too thick and groggy add some more coconut water and mango juice and stir it in rather than blending.
I served mine in old Kilner jars for a desert island feel and garnished with mango, lime wedges and hunks of coconut. Sit back and think of the travel possibilities!

DeleteOh that looks so yummy! Love everyhting about coconuts, the texture, the smell and the taste, it always takes me back to a white sand beach with lovely warm weather, which would be ideal right now. Still, will try this recipe, it's as close as I can get to that for now!.

I've travelled to quite a lot of countries in my years of flying as a cabin crew, but Tahiti is one place I'd love to go. Love the name of your header, certainly caught my attention with this juicy post!
